Pineapple Upside Down Cake

July29

I made a delicious [tag]pineapple upside down cake[/tag] last night. Yep, I was Miss Betty Crocker! It was a mix and so easy. It had crushed pineapple and brown sugar for the topping and I wanted the pineapple rings so I added those. The pineapple made the top of the [tag]cake[/tag] yummy and gooey. I really messed up though because I read the instructions and threw the box away. I thought to myself, “self, remember to leave the cake pan on it when you flip it over.” So, I take the cake out of the oven, flip it over and take the pan off. Arggghhhh! I took the pan off! I just told myself not to but I didn’t listen to myself!!! I had pineapple topping all over the counter top, down the cupboards and on the floor. I put the pan back on as fast as I could but it was too late. There is a reason they tell you to leave the cake pan on for 1 minute after flipping the cake upside down. As it cools, it coagulates and makes a crusty top. Oh well, it tasted yummy.
