Four Foods Last Week

I’m assuming that Val is caught up in trying to get everything done during the holidays, cook meals, working as seo of her home and working full time outside her home. Here is the Four Foods on Friday question for last week.

Tell me your four favorite fruits.

That is an easy one. I absolutely love a big juicy orange. Did you know that oranges originated in southeast Asia? It takes mutation to make my favorite, the navel orange. The naval orange contains no seeds so it is sterile. Poor thing. Navel oranges continue to be produced through cutting and grafting. I wonder what seo services it took to work through all that genetic makeup. If I had done it, we probably would have oranges the size of a quarter.

Oh! I guess we are supposed to list 4 fruits that are our favorites.
Okay, bananas because they are so easy to take with me. Apples because they help my digestive system and kiwi because they taste so good.

Tell me four things that you have made from scratch with chocolate (or just candy if you don’t/can’t have chocolate).

My idea of heaven would be to have a limo take me away to one of those Branson vacations full of oldies but goodies shows, massages and chocolate everything!

I use powdered chocolate to make mayonnaise cake. I use the baker’s squares of chocolate to make homemade brownies. I use chocolate chips to make magic cookie bars at Christmas time. I love to add butter scotch chips to waffles. Oh! that isn’t chocolate! Umm, I use chocolate chips to make toll house cookies.

Tell me four things that you ate on Thanksgiving Day this year.

We had the pleasure of joining friends in Illinois this Thanksgiving and we all went to a fabulous restaurant. We almost had to bring out the promotional umbrellas but there was a large overhang at the front door and my thoughtful son dropped us off at the door. We were seated in a room that was cozy yet large enough to seat a large party such as ours. We found ourselves very hungry and tried to hold back from rushing the buffet like a herd of wild animals. LOL

There were the traditional Thanksgiving choices on the buffet, turkey, mashed potatoes, gravy etc. There were a few things I had never tried before and that was fun.

I had some sort of cheese spread that I put on celery. I wish I could remember the name of this cheese.

I also tried cherry slice. It is a cross between pie and breakfast pastry. Yummm!

Green olives. I never buy these and I love them.

Venison sausage. This was not available at the restaurant, my husband brought this from a local deer processing center near our home. It was delicious.

This weeks Four Foods on Friday:
Tell me four things that you like cold or uncooked almost as much as you like cooked.

I like tuna when it is made into tuna salad for sandwiches. I don’t usually like tuna warmed up. I do make a mean Tuna Casserole!

I too, enjoy a good meatloaf sandwich. Especially on whole wheat bread with lots of ketchup. We often eat our leftovers on tv stands in the living room. Shhh, don’t tell my kids.

I like rice when it is cold. Add sugar and raisins.

I like spaghetti when it is put into a cold salad and mixed with green peppers, red peppers, black olives and Italian salad dressing.

Val’s question for this week’s Four Foods on Friday:

“Tell me either the four strangest things or four non-food items that are in your fridge.”

Just before we left for Dallas for our vacation, our refrigerator decided to quit running. We had to throw out most of what was in it. Before that, I could have put down a couple of weird things like, 3 jars of banana peppers or 5 different kinds of mustard. Right now, it is pretty generic. Give me a couple of weeks.

Not to change the subject but did you watch afternoon television today? Oprah gave away some pretty cool things on her show. Now, I want to buy ipod touch. Can you imagine winning a car? I think it would be fun to have money like Oprah and have fun giving it away.

Four Foods on Friday 114

From Val's Kitchen Looks like it is all about fast food this week!

* Who makes the best hamburger/cheeseburger?
* Who makes the best french fries?
* Who makes the best shake?
* Who makes the best chicken?

I love a Whopper from Burger King. My fries should be curly ones from Arby’s and I love a cookies and cream milk shake from Steak n Shake. I like KFC chicken. It sounds like I better be getting some life insurance quotes! I had no idea I was so opinionated on my fast food selections! I guess, if I am going to eat unhealthy foods, I better like them.

The question for this week’s FFonF is What can you make with meat or poultry, rice, cheese and a vegetable?

A few years ago, I entered a contest, hosted by Val, and won a wonderful cookbook. The cookbook is called, Campbell’s 3 books in one and has wonderful, easy recipes. This cookbook is all about fuss-free preparation and easy clean-up. One of my favorite recipes is in the Casseroles and One-Dish Meals book section. After cleaning hot tub covers and lawn furniture, I needed this recipe last night! It has everything to fit Val’s FFonF for this week except the cheese so, let me just say, I’d lay some slices of yummy cheddar cheese beside a serving of:

JOLLOF CHICKEN & RICE

1 tablespoon vegetable oil
2 1/2 to 3 1/2 pound broiler-fryer chicken, cut up
1 large onion, chopped (about 1 cup)
2 cloves garlic, minced
4 plum tomatoes, coarsely chopped (about 2 cups)
1 can (10 1/2 oz) Campbell’s Condensed Chicken Broth
1/2 cup water
1/2 teaspoon crushed red pepper
Few saffron threads or 1/4 teaspoon ground turmeric
1 cup uncooked regular long-grain white rice
1 cup coarsely chopped fresh spinach leaves

1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it’s well browned on all sides. Remove the chicken.

2. Reduce the heat to medium. Add the onion and garlic and cook until tender. Add the tomatoes and cook for 2 minutes.

3. Stir the broth, water, red pepper, saffron and rice into the skillet. Heat to a boil. Return the chicken to skillet and reduce the heat to low. Cover and cook for 25 minutes or until the chicken is cooked through.

4. Stir in the spinach. Let stand for 5 minutes.

Makes 4 servings

Four Foods on Friday and Chicken Sandwiches

I know. I know. It is Tuesday. I am behind! Here is the 110th edition of Four Foods on Friday!

What can YOU make with

* chicken
* bacon
* cheese
* tomatoes

Hmmm, I would try to make a chicken sandwich! This recipe doesn’t call for bacon but I would fry some bacon and crumble it to add as a garnish. Bacon goes good with everything! I’d add the tomatoes to the side as a salad.

Hot Buffalo Chicken Sandwiches

Serves:
4 servings

Ingredients

* 4 pieces, 6 ounces each, boneless, skinless chicken breast
* Salt and pepper
* 1 teaspoon sweet paprika, 1 /3 palm full
* 1 teaspoon chili powder, 1/3 palm full
* A drizzle extra-virgin olive oil

Sauce for chicken:

* 2 tablespoons butter
* 1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank’s Red Hot
* Bib or leaf lettuce leaves
* 4 crusty rolls, split
* 2 cups sour cream
* 4 scallions, thinly sliced
* 1/2 pound blue cheese, crumbled
* Small red onion, thinly sliced
* 8 ribs celery, cut into sticks
* 2 large carrots, peeled and cut into sticks

Directions

Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.

Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.

Place chicken breasts on bun bottoms and top with crisp lettuce. Combine sour cream, scallions and blue cheese and slather bun tops with blue cheese sour cream. Affix bun tops on sandwiches and serve with remaining sauce for dipping your veggies. Arrange Buffalo Chicken Sandwiches on dinner plates with red onion, celery and carrot sticks.

1. Name four things you are planning on eating this weekend.

Since it is Superbowl weekend, I will be eating plenty of junk food.

I cannot keep from eating puppy chow. I also eat nachos with cheese, pretzels and hot dogs cooked in grape jelly.
