Zucchini Boats Recipe

While visiting blogs during my Tackle It Tuesday rounds, I ran across a terrific recipe. The 160 Acre Woods shared her recipe for Zucchini Boats. I tried to make them last night but my neighbor didn’t have any zucchini left in her garden. Darn!

      We used to make something similar–cut the zuke in half and scoop out the inside. Dice it with tomato, onion, red pepper, put back in the zuke boat, top with a little mozz cheese and bake until browned. Yummy!
