Four Foods on Friday #11

I am a day late but, because it is easy and fun, I am still going to answer the questions for the Four Foods on Friday Meme sponsored by Valmg.

Here are this week’s four questions.

#1. Brownies. From a box or from scratch?
I used to make my brownies from scratch and never knew if they would turn out gooey in the middle and crunchy on the outside. I gave that up when I discovered the Ghiradelli Triple Chocolate box mix. It has big chunks of chocolate in the mix. The brownies are moist and always come out of the oven with a consistent cake like appearance and texture. They are irresistible.

#2. Chicken noodle soup. Does it cure everything? Do you make it from scratch, from a can or from a package? I used to eat chicken noodle soup from the can but now I cannot stomach it. It is so salty!
I make it using a can of chicken broth and add chicken that I have boiled and de-boned. I like to add celery and carrots that have been finely chopped. A bit of onion adds flavor. Just before I serve it, I like to add a small amount of noodles and boil them until they are done. This is a very healthy soup. I think it makes me feel better if my sinuses are clogged or I have a cold.

#3. Red skin potato salad. Do you think the red skin provides flavor or color? I like to eat potato salad that has the red skin left on, if I eat out. I haven’t had any luck preparing it at home. The peeling separates from the potato and doesn’t look very appetizing when I try to make it. I know a lot of people who do not like peeling in their potato salad. I hear negative comments a lot when we eat out at Texas Roadhouse because they serve the mashed potatoes that have the peeling in them. Personally, I like potato salad and mashed potatoes with the peelings in them. I don’t think they add any flavor. I wonder if they add any nutrition?

#4. French toast. How do you make yours? I usually make mine with regular bread. If I plan ahead, I like to buy Texas toast for my French toast. I mix a couple of eggs with a dab of milk and run the bread through the liquid on both sides of the bread. I let it sit in the liquid for a few seconds to give the toast substance. I put a little bit of oil in the bottom of a frying pan and basically fry the toast on both sides. I like to sprinkle it with a little powdered sugar and then I slather it with butter and syrup. Yummm. I am getting hungry.

      You’re on, and I gave you two because I can and I wanted to!
      You weren’t the only postie to mention those brownies. I really wish one right now, they are sooooo good.

      Ah, Karen. Your item #4 made me think of the potato skins that I haven’t eaten in years. When I was young, my Mom would bake the potatoes (red and regular). Our family would sit at dinner, laughing at some silliness as we scooped out the insides of those steaming spuds, put butter or sour cream in the crisp skins and eat them like a mini sandwich.

      The last time I did this with my Mom was a couple of months before she died. I was trying to help her as she battled leukemia. We made the potatoes because it was one of the few times that she felt well enough to have an appetite And this was one of the last fun-filled memories that I have of our time together.

      Thank you for writing this post. It made me recall those good days from when I was a child and those important times when a loved one was about to leave.

      Ron, I am so glad that it reminded you of those good times. I’m sorry for you at the loss of your mother. I cannot imagine how hard that must be. I hope I can be like you and focus on the happy times. Thanks for sharing.
